Turkey Pie with Grated Potatoes

It took me a bit of time to master this recipe: somehow I was either getting too much potatoes (honestly I have to get myself a cooking scale for Christmass) or potatoes I used were too juicy, so it was hard to get meat stuffing in the middle of the pie without sinking it into the batter.
Apparently this issue was easy to fix with draining redundant potato and onion juices using colander (ofc getting the right amount of potatoes helped a bit too).
Using of springform pan is convenient for this recipe however, if you don’t have one, any other baking pan of similar size will work fine.
Ingredients:
- 1 lb of ground turkey meat
- 2 garlic cloves
- 1.5 lb of potatoes
- 1 onion
- 2 eggs
- 5 oz of original sour cream
- 1 cup of flour
- Shredded cheese of your choice
- Paprika to taste
- Ground black pepper to taste
- Salt to taste
- Butter to smear baking form
How to prepare, step-by-step:
- Prepare ingredients:
- Start off by making stuffing. Move ground turkey to a mixing bowl, peel garlic and press it to the bowl:
- Season with salt, ground black pepper and paprika to taste and mix:
- Add one egg and mix:
- And about 5 oz of original sour cream, mix:
- Add 1/4 of a cup of flour:
- And mix:
- Now let’s prepare batter. Peel all potatoes and grate them partially on medium and partially on big slots of grater:
- Peel onion, and grate it on big slots to the same bowl:
- Move grated potatoes and onions to colander and place colander to a bowl for 10-15 mins to remove excessive juices:
- Move potato and onion back to a missing bowl. Add remaining egg, season with ground black pepper and salt, mix:
- Add remaining 3/4 of a cup of flour to the batter:
- Mix:
- Smear interior of a 9.5 inches wide springform pan with butter (I also fold spring outside with foil to prevent leaking). Pour all batter into the springform pan:
- With a spoon form borders of potato butter around the pan and leave space for turkey stuffing in the middle (it is hard to see borders on this photo, but they are there):
- Using a spoon move turkey mix to the middle of potato batter, spoon by spoon:
- Even meat layer up:
- Warm up oven to 390F, put pan to the oven for 45mins, then remove (keep oven on):
- Sprinkle with shredded cheese and put back to the oven for 15 mins more:
- Remove cooked turkey and potato pie from oven, carefully unfold foil and remove top part of the springform pan:
- Move pie to a plate:
- Slice in portion pieces and serve hot:
