Pork Loin Roll with Prunes and Carrots

Ingredients in this recipe for most part are the same as in meat stew with prunes and carrots, however for this one I suggest using pork loin – it is tender and much easier to slit flat to be able to roll it with stuffing.
Prunes are go great with pork meat. If you have dry prunes with pits – soak them in boiled water for 15-20 mins to soften and then remove pits before continue with recipe.
Boiled potatoes are great side dish for this entree, whatever you decide to go with mashed potatoes, baked potatoes or simple boiled potatoes, it will work good.
Ingredients:
- 2.5 – 3lb boneless pork loin, whole piece
- 1 big carrot
- 10-15 prunes, pitted
- 1 onion
- 1 tomato
- 2 tablespoons of vegetable oil
- Ground black pepper
- Salt

Rinse prunes with boiled water over in a small bowl, if prunes are very dry soak them in boiled water for 10-15 mins, then drain:

Warm up skillet with a spoon of vegetable oil (I used sunflower oil) over moderate heat, peel onion, slice it in half circles and fry until soft and brownish in color (stir from time to time):

Peel carrot, grate it on big slots of grater and add to the frying pan, fry stirring occasionally for 5-8 mins:

Add diced tomato, mix, reduce heat and braise vegetables together for about 8 mins more:

Meanwhile slice pork loin into flat piece:
Slit about 1/3 thick part of loin lenghtwise at the bottom Leave about 1/2 inch of meat connecting to the rest of meat And unfold top part flat
Repeat procedure for the remaining 2/3 side: slit inner part Leave about 1/2 inch of meat connecting to the rest of meat And unfold into flat piece

Generously salt and flatten unfolded pork loin with meat tenderizer from both sides (if you use plastic bag or food wrap, it will be easier to clean after):

By now carrots and onion filling should be ready, so move it to a bowl:

Slice each prune into quarters and add to the bowl:

Salt to taste, season with ground black pepper and mix:

Preheat oven to 430 F. Spread prune and vegetable filling evenly over the inner part of the flat pork loin, leave about 1/2 of inch of meat from sides free of filling:

Using 2 hands carefully roll meat keeping filling inside:

And secure with cooking twine every 2 inches:

Warm up skillet with a bit of vegetable oil. Fry pork roll from each side until golden brown:
Put pork roll fat side first on the skillet Flip to other side Color evenly on each side

Carefully transfer pork roll to the oven-proof baking pan:

And put to the preheated oven (430F) for 40-50 mins:

When meat is cooked take it from the oven and carefully remove twines:
