Quick to make and simple salad with chicken meat and tomatoes seasoned with mayo and garlic.

Tomatoes will produce juice after cutting, so it is better to assemble this salad right before you plan to serve it.

A lot in this salad will depend on how tasty tomatoes are, so pick good and ripe ones.

Meat Stew with Beer, Mushrooms and Vegetables

Meat stewed with mushrooms and vegetables in beer. It works good for dinner, left overs can be reheated for lunch. Boiled potato side dishes will go good with such meat.

I used beef for this recipe, but it will work good with either pork or beef. Tomato paste or canned tomatoes can be used instead of fresh tomatoes.

Amount of beer to use for this recipe will depend on the size of the pot you use, it should be enough to cover meat completely while cooking.

I just realized that my website doesn’t have any scrambled egg recipes published by now. So here is an attempt to fix this issue.

Obviously, this recipe is good for breakfast or brunch, or just for any time when you need to fix something to eat fast. Amount of ingredients is good for 2 portions.

You can use ham, just like I did, or canadian bacon, or hot dogs, or another kind of sausage you like. Taste will be slightly different.

Fish with Vegetables

This is my mom’s recipe, she used to cook pretty much any fish we had like this. Original recipe calls for parsley roots, but they are hard to come around here, so I used parsnips instead and it worked good.

Important moment: the fish should be with bones (so pieces won’t fall apart). Actually this recipe is very good for bony fish: if you let fish simmer with vegetables for longer – smaller bones will dissolve while cooking.

Beef sirloin steak meat marinated in gyros spices and vegetables turns out tender (if meat is of good quality) and somewhat spicy.

Meat needs to marinate for couple of hours, overnight is good, but it can go longer. I usually prepare meat and sear portion of it right before serving, and I store remaining marinated meat in fridge until I need it next time.

Accompanying beef gyros with Tzatziki sauce is a good choice, spices in meat and sauce blend in well.

Veal Rolls with Feta Cheese, Garlic and Olives

This recipe is not so budgety, prices for veal in US are somewhat high, but I like veal meat: it is lean and tender.

To reduce cost a bit, another part of veal can be substituted for scallopini here, pieces should be sliced thin, beef will do too but may need to be cooked longer to be tender.

Use any kind of white wine you like, it can be also served later with the course.

In anticipation of the spring in early March, here goes fresh tomato, cucumber and lettuce salad recipe.

These fresh vegetables taste so good in the Spring.

Prepare the salad soon before serving, cut fresh vegetables don’t like to wait.

If you want to make dressing lighter, use light mayo and low-fat yogurt instead of sour cream.
