Ricotta Cheese Stuffed Pasta
November 30th, 2013 in Main Dishes, No-meat, Pasta by Julia VolhinaThis is my first take on stuffed jumbo pasta shells, but I will must say it will not not be last: there are so many stuffings these may work nicely with.
In this recipe pasta is stuffed with five cheeses (ricotta, parmesan, provolone, mozzarella and romano), fresh parsley and egg mix.
For sauce I tried something new too: that is canned crushed tomatoes, usually I avoid using canned vegetables, but these worked well for sauce and saved me quite some time too.
Deviled Eggs with Blue Cheese
September 14th, 2013 in Appetizers & Snacks, Eggs by Julia VolhinaBlue cheese and boiled egg yolks seasoned with fresh parsley, tobasco sauce and mayo tastes a bit unusual and a bit spicy. But if you are true lover of blue cheese this recipe is definitely for you.
By the way if you like it to be more spice – use a bit more tobasco sauce, or you can skip the sauce all together otherwise.
If you would like eggs to look a bit more festive, use pastry bag with a star tip on it to arrange stuffing mix into egg halves, simple ziplock can be used too (just staff mix into it, seal it and cut one of tips off), or just a tea spoon.
Herb Butter with Dill and Garlic
August 24th, 2013 in Sauces & Dips & Spreads by Julia VolhinaHerb or herbed butter is not only a good way to dress plain butter for further use, but also a good way to preserve fresh dill if you have too much on your hands and no other use for it.
For some reasons stores here choose to sell dill in such big bunches that it is sometimes too hard to put it all to use before dill spoils. By the way, you can mix other fresh herbs to prepare herb butter.
Herb butter is essential ingredient of Chicken Kiev recipe (which goes out next week), but it can be also used on steaks, fish, potato or other vegetables.
Bean, Cucumber and Bell Pepper Salad
July 6th, 2013 in Salads by Julia VolhinaThis is an easy salad with boiled beans, fresh bell pepper and cucumber which can be assembled in under a 15 mins if you are fast with chopping and dicing.
Any kind of beans will work for this recipe, you can also boil beans yourself instead of using canned ones, just let them cool down till room temperature before adding them to the salad.
Fresh green parsley can be substituted for cilantro if you don’t like cilantro or can find it for some reason. But I like taste of bean salad with cilantro the most.
Fried Rice with Chicken and Vegetables
June 15th, 2013 in Chicken, Main Dishes by Julia VolhinaThis is my first attempt on cooking fried rice, one of the website visitors asked for a recipe and I decided to try some out.
I liked the result, but it is hard for me to judge, since fried rice isn’t very slavic food which I am more used to (main trick is to not overcook rice). If you decided to try it too, please let me know how it turned out for you.
By the way, in this recipe amounts of ginger and soy sauce can be adjusted to your taste.
Chicken Curry Kebabs
June 1st, 2013 in Chicken, Main Dishes by Julia VolhinaIt is BBQ season again. And these curry chicken kebabs are good fit for one of these.
Chicken meat turns out very tender and juicy, especially if you use boneless chicken thighs (but breasts will do too).
If you don’t want to bother with grill (even though it is pretty fun), you can roast skewers in the oven over the baking pan.
Beef Gyros with Vegetables and Spices
May 11th, 2013 in Beef, Main Dishes by Julia VolhinaBeef sirloin steak meat marinated in gyros spices and vegetables turns out tender (if meat is of good quality) and somewhat spicy.
Meat needs to marinate for couple of hours, overnight is good, but it can go longer. I usually prepare meat and sear portion of it right before serving, and I store remaining marinated meat in fridge until I need it next time.
Accompanying beef gyros with Tzatziki sauce is a good choice, spices in meat and sauce blend in well.
