Raw Vegetables and Chicken Salad with Feta

This salad is more advanced version evolved from Raw Vegetable Salad with Feta.

I added few ingredients: kale, celery, zucchini, corn, olives, mushrooms and a protein source, boiled chicken, to make things a bit more interesting.

I take this salad ingredients with me and slice them up at work for a healthy lunch. It only takes few minutes to do.

By the way, if you boil chicken right before making the salad, make sure you let it cool down to room temperature first.

It seems to me that sorrel isn’t something very popular in cooking in this part of the world.

But just in case if you were looking for some recipe using it, here is one: fresh raw salad with sorrel, apple and romaine lettuce dressed with lemon juice and honey.

If dressing seems too sour for you, replace some juice with water and increase amount of honey, that should do the trick.

This is a recipe for chicken salad made with crunchy walnuts and celery, dried cranberries and dressed with mayo.

It is pretty easy to do. All you need to do is to boil and dice chicken, slice celery and add rest of ingredients together.

This salad can be served as it is or on a bed of lettuce leaves as a salad entree. It also can be wrapped in a tortilla or served in a bread sandwich.

I am trying to eat my vegetables raw at the moment (losing some weight, trying to eat more healthy, running and such). So this is a salad which I make for myself for lunch at work to accomplish this.

It takes about 10 mins to do all the slicing and dicing. And maybe 5 more for cleaning and packing.

Occasionally I add to it raw corn, onions, spinach, lettuce to vary things up, but cucumbers, tomatoes, mini peppers and avocado are always present.

Yet another one chicken salad to be added to my list of recipes: tender chicken meat, boiled eggs, tasty cucumbers and spicy carrots prepare in korean style.

This salad will work great as a side or appetizer, or as a lunch meal itself, especially if you need something to take with you. It can be served plain, in a sandwich or in a wrap.

Salad can be dressed with a mix of mayo and sour cream instead of the mayo alone, if you are looking for healthier option.

Korean style carrots (“morkovka po-korejski”) is a popular in post-USSR countries dish which is usually served as salad, side dish or relish.

Often it is also served on hot dogs along with sausage inside the bun.

These pretty spicy carrots are great side for meats or poultry. They can also be used as one of ingredients for salads and other dishes.

Here is your step away from something usually called a dessert: fresh fruit salad dressed with plain yogurt.

No flour, no sugar, almost no fat (if you use low-fat yogurt); only fresh raw fruits loaded with vitamins and tons of good nutrients.

Besides being a dessert, this salad can be great choice for breakfast or lunch or just a snack when you need it.

You can mix and match fruits to your liking for this one. I used pineapples, banana, orange, apple, kiwi and pear. Mint is also optional and can be skipped it if you don’t like it.
