Mushroom and Carrots Stuffed Chicken Casserole

This is somewhat unusual dish to cook: mushroom and carrot stuffing baked inside of chicken meat “crust”.

But I assure you, it is totally worth cooking, for romantic dinner for example. Leftovers can be easily warmed up in microwave.

By the way, juices and removing casserole from the dish are a bit easier to handle if you use springform, but casserole dish would work too.

Spring is right around the corner. And even though nowadays you can buy fresh vegetables all year around, in spring they taste somehow special. Maybe this is a way how body let’s you know it needs to be replenished with vitamins.

This is why I am publishing this recipe for salad made of fresh bell peppers, cucumbers and tomatoes with boiled white chicken meat and a bit of cheese.

By the way, mayo in the dressing can be mixed with sour cream for skinnier version.

Chicken Rolls with Oranges

This is interesting recipe for a holiday or romantic dinner: tender chicken rolls stuffed with oranges.

Small orange segments are easier to wrap, so try to find small oranges. It is also important that oranges are not bitter and don’t have seeds.

Chicken rolls stuffed with oranges taste great when paired with potato side(s), for example with mashed potatoes.

It is a holiday season. In slavic world rare holiday table will go by without tons of salads, actually none will.

This is why I will try to focus on salad recipes these couple of week (as much as I can, during with my vacation to Ukraine).

This salad recipe calls for just few ingredients: chicken, mushrooms, eggs and mayo are main ingredients. And there is no onions or garlic, which makes this salad a good choice for lunch on a go.

Chicken Kiev Cutlets

Chicken Kiev Cutlets

This is one of recipes of ukrainian cuisine, after all it is named after capital of Ukraine – Kiev / Kyiv, but it is pretty popular through rest of former USSR countries.

Chicken Kiev is no ordinary recipe, but definitely one worth time spent: tender chicken meat folded around herb butter, covered in breadcrumbs and egg batter and cooked.

The trick is to fold meat and coat cutlets in batter in a way that herb butter doesn’t leak through holes while deep frying.

Chicken Cutlets with Mushroom and Cheese

One of visitors of forum I am often read shared this recipe, and I had to try it: it seems both easy to do and very unusual.

And turned out great: chicken meat pieces, mixed with mushroom pieces and cheese, tasty, juicy, melty and just great!

I tried two kinds of side dish with chicken and mushroom cutlets: boiled potatoes and boiled buckwheat, and I liked it. I think fresh veggies salad will be a good addition.

Zuppa Toscana (Italian Sausage Soup)

June 22nd, 2013 in Hot Soups, Soups by Julia Volhina
Zuppa Toscana (Italian Sausage Soup)

Zuppa toscana (or italian sausage soup with skin on potatoes, bacon and kale) is one of the reasons I usually go to Olive Garden for. Now with this recipe I don’t have to anymore (but I still can :), they also have neat tiramisu).

This soup has very distinctive italian taste because of spices in sausage. By the way either mild italian chicken meat mix with spices or sausages themselves will work for this recipe. I think meat mix is a bit easier to handle.

Using canned broth for this recipe is easier and saves time, but isn’t absolutely necessary, you can cook the broth yourself.

Serve this soup hot, that way it will provide nice warm feeling especially on cold weather. If you need to reheat the soup leftovers, don’t overheat it, just bring to light simmer and serve.
