Pasta with Chicken and Mushroom Sauce
September 29th, 2012 in Chicken, Main Dishes by Julia VolhinaCreamy chicken and mushroom sauce with feta cheese and parsley will work for any kind of pasta.
Don’t forget that different kinds of pasta require different time for cooking: check instructions on pasta package and adjust steps accordingly so both sauce and pasta are ready approximately in the same time.
By the way, white champignons can substitute for brown cremini mushrooms in this recipe.
Chicken and Feta Stuffed Mushroom Caps
July 21st, 2012 in Appetizers & Snacks, Chicken by Julia VolhinaI saw these gorgeous fresh mushrooms in the store, and it seemed they were asking to be stuffed – clean, big and even sized.
I decided to stuff them with creamy chicken and feta cheese mix dressed with sour cream and a bit of fresh parsley. If this sounds like a good idea to you, try this recipe.
And by the way, it can be served as an appetizer (especially if you use bite size mushroom caps), snack or even main course.
Chicken Liver with Mushrooms and Sour Cream
June 23rd, 2012 in Chicken, Main Dishes by Julia VolhinaThis is tender dish made of chicken livers cooked under sour cream and nutmeg sauce with mushrooms and carrots.
I love chicken liver for its texture and easiness to cook. However if for some reason you don’t like it or don’t have it, this dish can be also cooked with beef liver, just slice it in smaller pieces.
Chicken liver with mushrooms and sour cream goes great accompanied with boiled potatoes or buckwheat as a side dish. Serve it for lunch or dinner.

In my opinion mashed potatoes are the best side dish for this main dish, if you are looking for one.

Veal Stew with Chanterelles and Peas
December 10th, 2011 in Beef, Main Dishes by Julia VolhinaChanterelles are mushrooms which I simply can’t pass in the shop, even though they are seasonal or maybe because of that.
It is my shame, but I don’t know any way to prepare them other than this stew with veal and peas, but it sure tastes great!
You can substitute beef for veal, just increase cooking time to ensure meat is soft enough. You can also substitute white dry wine for water, if you feel like this.
