This is somewhat unusual dish to cook: mushroom and carrot stuffing baked inside of chicken meat “crust”.

But I assure you, it is totally worth cooking, for romantic dinner for example. Leftovers can be easily warmed up in microwave.

By the way, juices and removing casserole from the dish are a bit easier to handle if you use springform, but casserole dish would work too.

Creamy Fusilli Pasta with Broccoli and Cheese

Easy recipe to do fusilli pasta cooked with cream, broccoli and cheese.

I used italian blend cheese mix, but I think other cheese or cheeses will work as well.

As well as other kind of pasta, fusilli seemed like one of the choices, others will work good too.

Just cook pasta to your liking (or/and according to the package instructions until al dente).

I am trying to avoid fried foods for some time, and while actually doing so, I am amazed with how many recipes I use involve frying.

So I was staying in front of meat counter figuring out what to cook. And then lady behind the counter suggested to roast some beef.

And this is a recipe I decided to go with: roast beef marinated with onions, black pepper, coriander, allspice and bay leaves.

In addition to ingredients this recipe also required an oven bag or dutch oven with a lid.

Unusual combination of ingredients which produces interesting taste results: chicken pieces roasted under sauce made of mixture of melted butter, mustard, honey and curry.

This recipe is good choice for romantic or family dinner, leftovers can be reheated and served for lunch.

You can use chicken thighs (like I did), or drums, or a whole chicken sliced into portion pieces. Please note that drums will require less time for cooking.

Beef sirloin steak meat marinated in gyros spices and vegetables turns out tender (if meat is of good quality) and somewhat spicy.

Meat needs to marinate for couple of hours, overnight is good, but it can go longer. I usually prepare meat and sear portion of it right before serving, and I store remaining marinated meat in fridge until I need it next time.

Accompanying beef gyros with Tzatziki sauce is a good choice, spices in meat and sauce blend in well.

Turkey Meatloaf

This is another experiment with turkey meat, which I am not very familiar with. And I must say I like how it turned out.

I used ground turkey breast meat, but thighs would do good as well, or a combination of these.

This recipe is good choice for lunch or dinner, leftovers can be stored in fridge and warmed up before serving.

Cottage Cheese Pancakes

Cottage Cheese Pancakes

This is my attempt to adjust russian fresh pancake recipe to use domestic ingredients. Main ingredient – russian fresh white cheese – has much thicker consistency than cottage cheese which you can usually buy in the store.

By the advice of one of this blog readers, I tried cottage cheese produced by Friendship brand and the result turned out pretty good. Main challenge was to find a proper amount of flour, with about half of cup pancakes turned out very tender, but not too hard to handle.

If pancakes break when you try to flip them, make them smaller, these will be easier to handle. Enjoy for breakfast of brunch!
