Tuna and Mozzarella Salad
October 8th, 2016 in Salads by Julia VolhinaTuna and Mozzarella salad is my goto light salad with a bit of protein. It works great for training days, because I don’t feel hungry after it but I also don’t feel like I eat whole bunch of unhealthy stuff.
A lot in this salad depends on the taste of tuna, so use the kind of tuna you like. If you plan to use tuna canned in oil, you may reduce amount of oil in the salad dressing to balance calories consumed.
Fresh corn they sell here in US is usually soft, sweet and juicy, so I use it for this salad myself, however canned corn works just as well.
Apple, Sorrel and Lettuce Salad

But just in case if you were looking for some recipe using it, here is one: fresh raw salad with sorrel, apple and romaine lettuce dressed with lemon juice and honey.
If dressing seems too sour for you, replace some juice with water and increase amount of honey, that should do the trick.
Ham, Pineapple and Peas Salad

Freshly boiled peas can be substituted for canned peas on this one, but canned ones are some what easier to find.
Assemble salad right before you plan to serve it, lettuce will not keep freshness and crispness for long after slicing.
Shrimp, Lettuce and Egg Salad Recipe

Original recipe calls for 10 quail eggs, but I find them somehow hard to find here, so I used 2 chicken eggs as replacement.
Pineapples themselves are optional ingredient, you can skip on them if you wish so, but with them salad tastes more interesting.
Spring Radish Salad
March 23rd, 2013 in Salads by Julia VolhinaAnother spring-envy salad, probably not as light as one would want, mostly because of mayo. But in this one I wouldn’t suggest to replacing mayo with sour cream or yoghurt.
It doesn’t take much time to prepare, about 15 mins of mostly chopping. Boil eggs in advance, let them cool down till room temperature before adding to the salad.
Prepare this salad right before serving for best taste.
Lettuce, Tomato and Cucumber Salad

These fresh vegetables taste so good in the Spring.
Prepare the salad soon before serving, cut fresh vegetables don’t like to wait.
If you want to make dressing lighter, use light mayo and low-fat yogurt instead of sour cream.
