Minced Fish Cutlets with Rice

Minced Fish Cutlets with Rice

Tender fish cutlets can be prepared of many kinds of fish to your choice (I used tilapia fillets for example).

If fish you are planning on using has bones, they will need to removed before mincing, skin can be kept intact (presuming scales and fins removed as well).

Fish cutlets can be served warm or cooled down, boiled whole potatoes or mash potatoes are good side dish for these, a dash of mayo is a nice addition.

Crab Sticks Salad with Pickled Mushrooms and Apple

Crab Sticks Salad with Pickled Mushrooms and Apple

I didn’t post salad recipes for a while now, so wanted to come up with something special this time.

I chose salad made of surimi crab sticks mixed with tender pickled mushrooms, grated apple, fresh dill and parsley and dressed with ground black pepper and a bit of mayo.

This mix may seem unusual (especially here in US), however it is very popular in post-USSR countries. You can find it under name “Salad Anshlag” in menus.

Some people use boiled mushrooms for this recipe, however I prefer mushrooms pickled following this recipe: they are very easy to do and are less plain than just boiled; but this is a matter of preference.

Tomatoes Stuffed with Fresh Cheese

Tomatoes Stuffed with Fresh Cheese

These campari tomatoes stuffed with fresh quark cheese, chopped greens and garlic can be nice addition to any celebration table or a cookout: they look festive, taste good and can be easily eaten with fingers.

If you can’t find quark cheese (sometimes called farmers cheese, or fresh white cheese, or tvorog in russian) it may work with feta cheese, but I like it more with quark.

Seeds and pulp from tomatoes as well as top parts – once removed – are not needed for this recipe. You can discard them, or use in some other dish.

Many kind of stews and soups would only benefit from fresh tomatoes. I used seeds and juice from this batch to marinate a nice ribeye steak.

Crab Sticks Salad with Napa and Cucumber

Crab Sticks Salad with Napa and Cucumber

It is time for summer cookouts yet? I bet it is! Who said cookouts should be all meat and bread – add a bit of vegetables and crab sticks 🙂

Napa gives this salad tender filling; however you can substitute white cabbage for napa – it will work fine, just remember to tenderize shredded cabbage with your hands.

If you use frozen crab sticks, make sure they unfreeze completely and all extra liquid is removed before adding them to the salad.

Omelette with Sour Cream and Cheese

Omelette with Sour Cream and Cheese

Easy to do breakfast for two (or more, if needed) – omelette with sour cream seasoned with shredded cheese, chopped dill and green onions.

This omelette is good as it is, as well it can be used as a base for various stuffing.

This recipe doesn’t require flour (is gluten free); amounts of sour cream, cheese and greens can be varied to taste.

Lithuanian Borscht (Cold Borscht)

Lithuanian Borscht (Cold Borscht)

Are you suffering from hot weather like me? When outside feels like in the oven there is no better food to eat than cold soup. Lithuanian borscht is a nice refreshing buttermilk based cold soup you can put together without any extra hassle and then enjoy it sitting on the patio.

The real trick to Lithuanian borscht is to find good kefir – it should be original kefir which hasn’t been flavored with any tastes, not salted and not sweetened. I used plain unsweetened kefir (can be replaced with buttermilk) from Lifeway and it worked out perfectly.

The rest of ingredients: vegetables (beets, cucumber and greens) and hard boiled eggs, are easy to get and not pricey at all. And btw, even though this soup is called a “borscht”, the only thing it has in common to other borschts, I guess, is the color.

Summer Salad with Tomatoes and Cucumbers

After all those snow emergencies, I’ve got hungry for some fresh vegetables. Lucky for me there are plenty in the nearby grocery store: despite there is no summer here yet.

So I decided to make simplest salad I know: summer salad with tomatoes and cucumbers, seasoned with chopped fresh dill and green onions, and dressed with oil.

This salad is perfect for any meat or poultry main dish. And even though it is not quite summer yet, I hope you are the same lucky like me and can buy fresh tomatoes and cucumbers right now to enjoy taste of fresh vegetables and replenish your body with some vitamins.
