Walnut Cranberry Chicken Salad
September 27th, 2014 in Salads by Julia VolhinaThis is a recipe for chicken salad made with crunchy walnuts and celery, dried cranberries and dressed with mayo.
It is pretty easy to do. All you need to do is to boil and dice chicken, slice celery and add rest of ingredients together.
This salad can be served as it is or on a bed of lettuce leaves as a salad entree. It also can be wrapped in a tortilla or served in a bread sandwich.
Whole Roast Turkey with Couscous Stuffing

It was my first attempt to prepare a whole roast turkey. And I must say it was a good one: turkey turned out very juicy, by the way I used cranberry sauce from last week post for this recipe.
If you are using turkey bigger than 11lbs, you may need to adjust cooking time and maybe use meat thermometer (which I never can figure out how to use myself) to make sure meat is properly cooked through.
Cranberry Sauce for Meat

Since I didn’t have many of these (being in US for about 4 years now and not having family here) I had to do a bit of research to find a recipe.

Apple & Cranberry Kompot

Some of you may also assume there is a grammatical error in the title of this post and I probably mean the apple & cranberries compote (stewed fruits, the dessert), however there is no error: kompot is a drink made of stewed fruits and/or berries, fresh or dried, or a combination of those, and it is traditional drink in many countries of Eastern Europe.
Making kompot is almost effortless, it takes not more then 20 mins (if you don’t count cooling down time in) to get great fruit and healthy drink for you and especially your kids and I believe they will like it much more than those powder-produced drinks from bottles and cans people drinking so much nowadays.
Autumn is a time when fresh apples and cranberries are in every grocery shop and supermarket, Apple & Cranberry Kompot is one of easy way to prepare those two together and it goes good with Apple Cake.
