Chicken Salad with Cucumbers and Korean Style Carrots
August 16th, 2014 in Salads by Julia VolhinaYet another one chicken salad to be added to my list of recipes: tender chicken meat, boiled eggs, tasty cucumbers and spicy carrots prepare in korean style.
This salad will work great as a side or appetizer, or as a lunch meal itself, especially if you need something to take with you. It can be served plain, in a sandwich or in a wrap.
Salad can be dressed with a mix of mayo and sour cream instead of the mayo alone, if you are looking for healthier option.
Mushroom and Carrots Stuffed Chicken Casserole
May 31st, 2014 in Chicken, Main Dishes by Julia VolhinaThis is somewhat unusual dish to cook: mushroom and carrot stuffing baked inside of chicken meat “crust”.
But I assure you, it is totally worth cooking, for romantic dinner for example. Leftovers can be easily warmed up in microwave.
By the way, juices and removing casserole from the dish are a bit easier to handle if you use springform, but casserole dish would work too.
Tortilla Rolls with Crab Sticks and Cheese
May 24th, 2014 in Appetizers & Snacks by Julia VolhinaI had some tortillas left from the pack I used on recipe earlier this month. So I decided to post another recipe for tortilla rolls, this time with crab stick, cheese, garlic and greens stuffing.
The same as the first one, these rolls will work perfectly as a snack or an appetizer, and they go great together with beer.
So if you are looking for some unusual snack recipe, here it is.
Eggplant Roast with Vegetables
May 17th, 2014 in Appetizers & Snacks, Main Dishes, No-meat, Sides by Julia VolhinaThis is nice looking dish which can be served as either a main entree, a side dish, or an appetizer.
It contains no meat, just eggplant, bell pepper, tomatoes, sour cream and cheese.
Eggplant roasted this way looks festive (and will for sure fit nicely on a holiday table), and it is also pretty easy to do.
One medium size eggplant will produce 2-3 servings.
Creamy Fusilli Pasta with Broccoli and Cheese
April 26th, 2014 in Main Dishes, No-meat, Pasta by Julia VolhinaEasy recipe to do fusilli pasta cooked with cream, broccoli and cheese.
I used italian blend cheese mix, but I think other cheese or cheeses will work as well.
As well as other kind of pasta, fusilli seemed like one of the choices, others will work good too.
Just cook pasta to your liking (or/and according to the package instructions until al dente).
Salad with Chicken and Fresh Vegetables
March 8th, 2014 in Salads by Julia VolhinaSpring is right around the corner. And even though nowadays you can buy fresh vegetables all year around, in spring they taste somehow special. Maybe this is a way how body let’s you know it needs to be replenished with vitamins.
This is why I am publishing this recipe for salad made of fresh bell peppers, cucumbers and tomatoes with boiled white chicken meat and a bit of cheese.
By the way, mayo in the dressing can be mixed with sour cream for skinnier version.
Summer Squash Omelette
February 15th, 2014 in Eggs, Main Dishes, No-meat by Julia VolhinaPerfect recipe for breakfast or brunch, especially on a weekend.
Summer squashes or zucchinis or a combination of these will work for this recipe. One or two, depending on their size and size of skillet you use. You will need just enough to form a single layer.
I used italian blend of cheeses, it worked perfectly. Other cheese or combination of cheese to your liking will work as well.
