Recipe for a soup, quick to prepare as it doesn’t require additional time to cook a broth and it also calls for a limited amount of ingredients, yet it is pretty delicious.
It is pretty filling, with all the meat and eggs, and also warming up and I think it is a perfect winter time meal.
And also great choice for the times when you are short on time.
Something simple to start a new year with.
Ingredients:
1.5lb of boneless pork meat
4 eggs
3/4 cup of sour cream
5 tablespoons of flour
1 onion
2 carrots
Piece of parsley root
1 red bell pepper
3 garlic cloves
1 tablespoon of white wine vinegar
Bunch of fresh dill
Ground black pepper to taste
Salt to taste
How to prepare, step-by-step:
Prepare ingredients:
Clean meat, dice it is smaller pieces:
Fill a pot with water (about 4 quarts of it), put meat in and bring to slow simmer. While meat is cooking peel and chop the onion, peel and slice parsley root, peel and grate carrots on big slots of grater:
When meat starts cooking it will produce some foam on top, remove it with a skimmer, it may take few rounds to clean it up completely:
Once broth is skimmed, add chopped onion:
Add sliced parsley root:
And grated carrots:
Cook everything over slow simmer for 5 mins, then add sliced bell pepper and continue cooking over slow simmer for about 25 more mins:
While soup is cooking, add flour to sour cream:
Mix:
Crack an egg in and mix with sour cream and flour:
In the same way mix in rest of eggs:
At the end, you will get rather liquid batter. Salt to taste:
After about 25 mins of cooking the soup, pour the egg, sour cream and flour mixture into the soup (the soup will thicken):
Peel and press garlic cloves, add them to the soup, cook for about 5 mins:
Season with ground black pepper to taste:
Add chopped fresh dill:
Add white wine vinegar (about 1 tablespoon, but can go for more if you feel like it):
Cook for 1 more minute, and the turn the heat off, the soup is ready:
