Fried Zucchini with Garlic is very good on its own as a snack or an appetizer, however it is also perfect for poultry and meat entrees as a side dish.
Reduce amount of garlic if you are worried about a breath, but I really advice to keep garlic in, this dish isn’t so tasty without it. Fresh garlic can be replaced with garlic powder if needed.
Ingredients:
2 zucchinis
2-3 garlic cloves
Ground oregano
Olive oil
Salt
How to make, step-by-step:
Wash zucchinis in cold water, skin garlic:
Slice zucchinis into pieces about 1/2 of the inch thick:
Warm up a frying pan over moderate heat with 1-2 tbs of olive oil. Fry each piece of zucchini from each side till the moment it gets soft when you pierce it with a fork. If you see zucchini circles are getting too dark while are not so soft yet, reduce heat a bit:
Take a bowl or a plate, put a portion of the zucchini circles which are soft already on it, season them with salt and ground oregano:
Slice clove of the garlic like it is show on the picture:
Then slice part of it like this over the bowl with fried pieces of zucchini:
You will get a layer of fried zucchinis seasoned with oregano, salt and garlic, just like the following:
Now you just need to repeat steps from #3 to #6 for all zucchini circles you have:

Definitely, it will probably create a tzaziki dish with fried zuchini... some dill on the top and voila... a new yammi dish... :)
ps. I don't know how to post this question in a separate message so forgive me if it is not related with the above recipe: have you ever tried to make home made mayonese? My son loves it, especially the one sold as a roasted gralic mayonase and I have noticed you use mayonese a lot. I would love to know if you have any suggestions or ideas on the recipe... I would love to try and make one... Thank you so much
I did it long ago, while still at home, but here is a recipe if you wish to try. I guess for roasted garlic one you will need to add roasted garlic to it :) :
2 egg yolks, about 2 cups of oil (sunflower or olive), 0.5 teaspoon of salt, 0.5 teaspoon of sugar, 0.5 teaspoon of mustard, 2-3 tablespoons of lemon juice diluted with boiled and cooled down water to taste (or vinegar diluted as well).
Combine egg yolks at room temperature, salt, sugar and mustard in mixing bowl and emulsify.
Start adding oil (it should be at room temperature as well), very slow at beginning, teaspoon by teaspoon, make sure you mix in one before adding another.
Once oil is in, mix in lemon juice (or vinegar) till the consistency you like.
Something like this.
I usually pour greek yogurt after they are ready as in your photo, and it becomes a fresh summer dish. The yougurt takes the flavour of the garlic and zuchini and it is such a tasty dish. I love it.
Interesting idea, I will try it next time, I bet sour cream would work as well.
