Chicken Kiev Cutlets
August 31st, 2013 in Chicken, Main Dishes by Julia VolhinaThis is one of recipes of ukrainian cuisine, after all it is named after capital of Ukraine – Kiev / Kyiv, but it is pretty popular through rest of former USSR countries.
Chicken Kiev is no ordinary recipe, but definitely one worth time spent: tender chicken meat folded around herb butter, covered in breadcrumbs and egg batter and cooked.
The trick is to fold meat and coat cutlets in batter in a way that herb butter doesn’t leak through holes while deep frying.
Herb Butter with Dill and Garlic
August 24th, 2013 in Sauces & Dips & Spreads by Julia VolhinaHerb or herbed butter is not only a good way to dress plain butter for further use, but also a good way to preserve fresh dill if you have too much on your hands and no other use for it.
For some reasons stores here choose to sell dill in such big bunches that it is sometimes too hard to put it all to use before dill spoils. By the way, you can mix other fresh herbs to prepare herb butter.
Herb butter is essential ingredient of Chicken Kiev recipe (which goes out next week), but it can be also used on steaks, fish, potato or other vegetables.
Meat Stew with Beer, Mushrooms and Vegetables
August 17th, 2013 in Beef, Main Dishes, Pork by Julia VolhinaMeat stewed with mushrooms and vegetables in beer. It works good for dinner, left overs can be reheated for lunch. Boiled potato side dishes will go good with such meat.
I used beef for this recipe, but it will work good with either pork or beef. Tomato paste or canned tomatoes can be used instead of fresh tomatoes.
Amount of beer to use for this recipe will depend on the size of the pot you use, it should be enough to cover meat completely while cooking.
Scrambled Eggs with Ham and Tomatoes
August 10th, 2013 in Eggs, Main Dishes by Julia VolhinaI just realized that my website doesn’t have any scrambled egg recipes published by now. So here is an attempt to fix this issue.
Obviously, this recipe is good for breakfast or brunch, or just for any time when you need to fix something to eat fast. Amount of ingredients is good for 2 portions.
You can use ham, just like I did, or canadian bacon, or hot dogs, or another kind of sausage you like. Taste will be slightly different.
Chicken Cutlets with Mushroom and Cheese
August 3rd, 2013 in Chicken, Main Dishes by Julia VolhinaOne of visitors of forum I am often read shared this recipe, and I had to try it: it seems both easy to do and very unusual.
And turned out great: chicken meat pieces, mixed with mushroom pieces and cheese, tasty, juicy, melty and just great!
I tried two kinds of side dish with chicken and mushroom cutlets: boiled potatoes and boiled buckwheat, and I liked it. I think fresh veggies salad will be a good addition.
Salmon in Mustard, Lemon Juice and Soy Sauce Marinade
July 27th, 2013 in Fish, Main Dishes by Julia VolhinaThis is very easy way to cook salmon, you just need to put marinade together, pour it over salmon and then cook salmon together with marinade.
I used portion salmon fillets for this recipe (6oz each), but salmon steaks or a whole salmon fish will work here as well. For cooking whole fish increase marinating time for couple of hours or even do it overnight, and bake it instead of frying.
Fresh vegetables or boiled potato are good side dishes for salmon cooked this way.
Quick Crescent Rolls with Meat and Cheese
July 20th, 2013 in Appetizers & Snacks by Julia VolhinaI was short on time this couple of weeks having visitors at home and at work. So I didn’t have much time to prepare a recipe in time for today.
It is a bit unusual of me to use “ready-to-use” ingredients in my food, but they save time if you need it to attend to other things.
Crescent dough sold in store makes decent rolls, which are good when you need to cook something to bite fast. So here is one of recipes for these.
I used ham as meat for this recipe, because that is what I had in my fridge. But you can be creative and use cooked bacon, or canadian bacon, or hot dogs, or another sausage, or a combination of these to your taste.
