Meatballs in Milk Sauce

Not so complicated recipe for meatballs, will take roughly an hour to cook and will produce quite a lot to eat after.

These meatballs taste great straight from the oven or reheated later on. Pair well with mashed potatoes, pasta or grains (like boiled buckwheat here for example).

Trickiest trick here is to not burn the sauce while cooking, just make sure cooking temperature is low enough for light simmer and stir pot from time to time, using thicksided cooking pot or a deep cast iron skillet is a good option too.

Ingredients:

  • 2lb meat (50×50 pork and beef mix or other to taste)
  • 1/3 cup of rice
  • 2 medium size onions or a big one
  • 1/4-1/3 cup of cold water
  • 1/4 cup flour for sauce + more for dusting
  • Milk 2-3 cups, to taste
  • 2 tablespoon of butter
  • 2 bay leaves
  • 5-7 allspice peppercorns
  • 7-10 black peppercorns
  • Dry dill to taste
  • Ground black pepper to taste
  • Salt to taste
  • Oil for frying

How to make, step-by-step:

  1. Prepare ingredients:

  2. Bring a pot with water to boil, add rice and cook rice until almost cooked thought (see step-by-step instructions), let it cool down till room temperature:

  3. Peel onions, chop them either using food processor or simple grate them on big slots of grater, add to the mixing bowl along with meat:

  4. Add cooked rice:

  5. Add salt and ground black pepper to taste:

  6. Mix enough of cold water to make mixture juicy but not too liquid:

  7. Mix everything:

  8. Warm up oil in a skillet. Pour flour for dusting into a bowl. Using a spoon scoop a portion of meat mixture and form a meatball:

  9. Dust it in flour from all sides:

  10. Move to a warmed up skillet and repeat with remaining meat mixture. Fry all meatballs from all sides evenly:

  11. Transfer colored meatballs in to thick sided cooking pot, add bay leaves and allspice and black pepper corns:

  12. Season with dry dill (and any other spices you like to taste):

  13. Set pot with meatballs aside while preparing roux sauce:
    Melt butter in deep saucepan
    Stir in all of the flour
    Cook and stir constantly

    Gradually mix in milk
    Mix to break any lumps
    Cook until thickens, pour in

  14. Cover pot with a lid, bring to light simmer and cook for about 15 mins, stir and move meatballs from time to time to prevent sauce from burning, then serve:
