Baked Cod in Mustard and Lemon Marinade

Cod fish may taste a bit plain and somewhat boring, but not if prepared with mustard and lemon marinade like in this recipe.

Onions cooked along with fish in the same marinate taste just great (I think I might like onions the same as fish if not more). So don’t be shy on amount of onions to use.

Marinating requires at least an hour, but can be extended to few, as long as you keep the fish is in the fridge. And will allow to do all preparations in advance in needed and then cook fish right before the serving.

Ingredients:

  • 1-1.5lb of cod fish filet
  • 1-2 big onions
  • 4 tablespoons of any mustard (or if you have: 2 tbsp of dijon mustard + 2 tbsp of original mustard)
  • Juice of 1 lemon
  • 0.5 teaspoon of sugar
  • 1 teaspoon salt
  • 1 tablespoon of olive oil
  • Herbs to taste (whatever you like with your fish: rosemary, thyme, marjoram, parsley, dill, black pepper, etc)

Additional Tools:

  • Aluminum foil
  • Baking pan

How to prepare, step-by-step:

  1. Prepare ingredients:

  2. Start off by preparing the marinade. For that pour mustards into a mixing bowl:

  3. Add salt, sugar and herbs/spices to taste:

  4. Add olive oil:

  5. Pour in juice squeezed out of one lemon:

  6. Mix everything well:

  7. Slice cod fish filets into portion pieces about 1 inch wide, arrange them in a bowl:

  8. Pour marinade over prepared fish, toss fish a bit to let marinade spread, cover bowl with a lid or plastic wrap and put to the fridge to marinate for at least an hour (or more if needed):

  9. Warm up oven to 355F. Smear baking pan with oil. Peel onions and slice them in circles. Arrange onions at the bottom of the baking pan in an even layer (onions cooked in mustard and lemon marinate will taste great and are good addition to fish itself, so I suggest to go with 2 onions at least):

  10. Arrange marinated fish on top of onions in a single layer as well, pour any remaining marinade on top, and put baking pan to the warmed up oven. After 30 mins turn the oven off, cover the pan with a food foil and let the pan sit in the turned off oven for 30 mins more:

  11. Then serve baked cod along with onions with potatoes or vegetables:
