Baby Back Ribs with Soy Sauce, Ginger and Leeks

In this recipe baby back ribs are first boiled, then fried and then stewed with sauce prepared with leeks, ginger, soy sauce, wine and balsamic vinegar.

It is good way to cook ribs if you don’t have or don’t want to use grill.

Serve ribs warm with side dish of potatoes, pour sauce over ribs.

Ingredients:

  • 2lb rack of baby back ribs
  • 3 quarts of water
  • 2 inches long fresh ginger root
  • 3 leeks
  • 4 tablespoons of dry wine (red or white, to taste)
  • 2 tablespoons of olive oil
  • 4 tablespoons of soy sauce
  • 4 tablespoons of sugar
  • 2 tablespoons of white balsamic vinegar
  • 2 tablespoons of sesame oil (optional)
  • Salt to taste

How to prepare, step-by-step:

  1. Prepare ingredients:

  2. Rinse and separate ribs:

  3. Fill cooking pot with 3 quarts of water and boil it to boil, salt water to taste (I put about 1 tablespoon):

  4. Peel and dice ginger, add half of it to the pot (leave another half aside):

  5. Clean and rinse leeks (make sure you get all the dirt from between leaves); slice leeks and put half of it to the pot:

  6. Add two tablespoons of wine:

  7. Move separated baby back ribs to the pot:

  8. Bring cooking pot to slow simmer and cook ribs for about 45mins (meat should be soft, but shouldn’t fall of bones, there will be more cooking):

  9. When ribs are ready, move them to a plate covered with paper towel:

  10. Strain a portion of broth produced by boiling of ribs using colaider, you will need about 1.5 cups for sauce:

  11. Warm up deep skillet with 2 tablespoons of olive oil over medium high heat and fry all ribs over from each side, until lightly colored; move ready ribs back to the plate:

  12. Get remaining leeks and ginger:

  13. First add to the skillet leeks, fry for 2-4 mins, stir from time to time:

  14. Then add ginger and fry for 3 mins more, stir:

  15. Add 1.5 cups of broth strained earlier, bring to boil and reduce heat so sauce is simmers lightly:

  16. Add 4 tablespoons of soy sauce:

  17. And 4 tablespoons of sugar, cook until sugar dissolves:

  18. Move ribs back to the skillet:

  19. Increase heat and cook ribs with sauce until sauce begins to thicken (10-15 mins):

  20. Then add 2 tablespoons of white balsamic vinegar:

  21. Remaining 2 tablespoons of wine:

  22. And 2 tablespoons of sesame oil:
