I am trying to avoid fried foods for some time, and while actually doing so, I am amazed with how many recipes I use involve frying.

So I was staying in front of meat counter figuring out what to cook. And then lady behind the counter suggested to roast some beef.

And this is a recipe I decided to go with: roast beef marinated with onions, black pepper, coriander, allspice and bay leaves.

In addition to ingredients this recipe also required an oven bag or dutch oven with a lid.

Rice, Milk and Raisins Porridge

Rice, Milk and Raisins Porridge

This is a breakfast food of my childhood: soft rice porridge cooked with milk and sweet raisins.

Round kinds of rice will probably work better for it, but any white rice will do.

Cook porridge on slow simmer. Don’t forget to stir while cooking, to prevent rice from sticking to the bottom of the pot and burn.

Amount of milk to use for this recipe will vary depending on kind of rice and how liquid you like your porridge to be. I used exactly 2 cups.

I saw veal rolls with pear meal in some TV show once and wanted to try it ever since.

The combination of ingredients in this recipe is unusual, veal is pretty expensive and somewhat hard to find here in US. This is probably the reason why I got to this recipe only now.

I used veal scallopini here, because they are already sliced, and it is easier to pick meat pieces of right amount and size. But you can also use whole piece of veal meat and slice it yourself. As for the pear, use ripe fragrant pear for better results.

Perfect recipe for breakfast or brunch, especially on a weekend.

Summer squashes or zucchinis or a combination of these will work for this recipe. One or two, depending on their size and size of skillet you use. You will need just enough to form a single layer.

I used italian blend of cheeses, it worked perfectly. Other cheese or combination of cheese to your liking will work as well.

Chicken Rolls with Oranges

This is interesting recipe for a holiday or romantic dinner: tender chicken rolls stuffed with oranges.

Small orange segments are easier to wrap, so try to find small oranges. It is also important that oranges are not bitter and don’t have seeds.

Chicken rolls stuffed with oranges taste great when paired with potato side(s), for example with mashed potatoes.

Fried Rice with Shrimps

One more recipe for fried rice, this time with shrimps.

As any fried rice, it is pretty easy and fast to cook, especially if you use frozen vegetables, just don’t forget to unfreeze them as well as shrimps in advance before cooking.

Most of the salt for this recipe comes from soy sauce, only eggs need a bit of additional salting.

Vegetables with Cream

Vegetables with Cream

Vegetables with cream are pretty easy to cook and they make a great side dish for meat or poultry. It can also be served as a no-meat course.

I used carrots, broccoli and cauliflower florets with peas for this recipe, but it will also work good with green beans, zucchini, brussels sprouts, whatever you have on your hands.

The same, you can use either fresh vegetables or frozen ones, or a combination of these. For example, for this recipe I used fresh broccoli and cauliflower with frozen sliced carrots and frozen peas.
