Mushroom and Carrots Stuffed Chicken Casserole
May 31st, 2014 in Chicken, Main Dishes by Julia VolhinaThis is somewhat unusual dish to cook: mushroom and carrot stuffing baked inside of chicken meat “crust”.
But I assure you, it is totally worth cooking, for romantic dinner for example. Leftovers can be easily warmed up in microwave.
By the way, juices and removing casserole from the dish are a bit easier to handle if you use springform, but casserole dish would work too.
Chicken Rolls with Oranges
January 18th, 2014 in Chicken, Main Dishes by Julia VolhinaThis is interesting recipe for a holiday or romantic dinner: tender chicken rolls stuffed with oranges.
Small orange segments are easier to wrap, so try to find small oranges. It is also important that oranges are not bitter and don’t have seeds.
Chicken rolls stuffed with oranges taste great when paired with potato side(s), for example with mashed potatoes.
Chicken with Mustard, Honey and Curry
November 16th, 2013 in Chicken, Main Dishes by Julia VolhinaUnusual combination of ingredients which produces interesting taste results: chicken pieces roasted under sauce made of mixture of melted butter, mustard, honey and curry.
This recipe is good choice for romantic or family dinner, leftovers can be reheated and served for lunch.
You can use chicken thighs (like I did), or drums, or a whole chicken sliced into portion pieces. Please note that drums will require less time for cooking.
Whole Roasted Chicken with Mayo and Garlic
November 2nd, 2013 in Chicken, Main Dishes by Julia VolhinaWhole chicken smeared with mayo and garlic mix and roasted in an oven bag is probably the easiest way to cook a whole chicken.
Oven bag can be replaced by cooking foil, just cover baking pan with chicken in it with one or two layers.
When checking if chicken is cooked through use meat thermometer (around 160F-170F), or go by clear juices produced when you pierce chicken around thigh, or just by time – around 1.5h at 350F.
Chicken Kiev Cutlets
August 31st, 2013 in Chicken, Main Dishes by Julia VolhinaThis is one of recipes of ukrainian cuisine, after all it is named after capital of Ukraine – Kiev / Kyiv, but it is pretty popular through rest of former USSR countries.
Chicken Kiev is no ordinary recipe, but definitely one worth time spent: tender chicken meat folded around herb butter, covered in breadcrumbs and egg batter and cooked.
The trick is to fold meat and coat cutlets in batter in a way that herb butter doesn’t leak through holes while deep frying.
Chicken Cutlets with Mushroom and Cheese
August 3rd, 2013 in Chicken, Main Dishes by Julia VolhinaOne of visitors of forum I am often read shared this recipe, and I had to try it: it seems both easy to do and very unusual.
And turned out great: chicken meat pieces, mixed with mushroom pieces and cheese, tasty, juicy, melty and just great!
I tried two kinds of side dish with chicken and mushroom cutlets: boiled potatoes and boiled buckwheat, and I liked it. I think fresh veggies salad will be a good addition.
Fried Rice with Chicken and Vegetables
June 15th, 2013 in Chicken, Main Dishes by Julia VolhinaThis is my first attempt on cooking fried rice, one of the website visitors asked for a recipe and I decided to try some out.
I liked the result, but it is hard for me to judge, since fried rice isn’t very slavic food which I am more used to (main trick is to not overcook rice). If you decided to try it too, please let me know how it turned out for you.
By the way, in this recipe amounts of ginger and soy sauce can be adjusted to your taste.
