Is it necessary to salt the zucchini? I have high blood pressure & need to watch how much salt I use. I realize the salt is rinsed off. I tried to google search how much might be absorbed but I couldn't find anything. I look forward to your recipes. They're all so interesting.
Salt takes away zucchini juices, w/o salting them they will be watery I think. But health is definitely more important than texture, if you want to reduce salt - skip it.
